I’ve been trying to come up with something creative, fascinating, and inspiring to post on this humble blog…I got nothing. Obviously.

Well, since it’s been so long, I figured there can’t be many people checking this page, so I’ll just write about something pretty ordinary. Food. One of my true passions. Every week, Lorin and I come up with a list of dinners I’ll make that week, that way when I go grocery shopping, I know exactly what I’ll need for that week. This recipe has been my favorite this week:

Rigatoni with Gorgonzola

14 oz. dried rigatoni

2 tbsp. butter (I use unsalted)

6 fresh sage leaves

7 oz. Gorgonzola cheese diced

3/4 -1 cup heavy cream

2 tbsp. dry vermouth (I used white cooking wine)

salt and pepper

Bring a large, heavy bottom pan of lightly salted water to a boil. Add the pasta, return to a boil and cook for 8-10 minutes, until tender but still firm to the bite.

Meanwhile, melt the butter in a separate heavy bottom pan. Add the sage leaves and cook, stirring gently, for 1 minute. Remove sage leaves. (You can use the leaves later as a garnish, but I just throw them away.) Add the cheese and cook, stirring constantly, over low heat until it has melted. Gradually stir in 3/4 cup of the cream and the vermouth. Season to taste with salt and pepper and cook, stirring until thickened. Add more cream if the sauce seems too thick.

Drain the pasta well and transfer to a warmed serving dish. (I just put it back in the pot it was cooked in.) Add the Gorgonzola sauce, toss well to mix, and serve immediately. (I also made chicken and sweet peas to round it out.)

I am always looking for new recipe’s so I figured I’ll post one recipe a week and hopefully it will help someone else. I do realize this recipe isn’t kid-friendly, but Emma’s not eating what we eat yet, so I’m taking full advantage while I can!

Ok, so while I’m on the subject of food, I found these waffles the other day and they are the most phenomenal waffles I’ve ever tasted. Seriously. Ever.

I found them at Walmart. The Blueberry are my favorite so far. They also make pancakes and french toast. I have a box of the sweet potato cinnamon pancakes in the freezer, but haven’t tried them yet. Try them if you haven’t yet!

Little Things That Make My Heart Bounce

  • Emma’s smiling face when she’s well rested.
  • When we’re driving silently and Lorin reaches over to hold my hand.
  • The smell of summer (including, but not limited to: fresh cut grass, roasting marshmallows over our fire pit, grilling out, the beach, citronella, etc.)
  • When my kitchen is clean.
  • The look on Lorin’s face when he really enjoys a dinner I made.
  • When Emma falls asleep in my arms.
  • When Emma plays with my hair…and doesn’t pull it.
  • Good hair days!
  • When Emma naps long enough for me to clean, get a shower, and watch Jon & Kate Plus 8!
  • Ripe raspberries.
  • Praise & Worship.
  • Sunshine…even if it’s cold outside.
  • My mom’s cooking.
  • The fact that the writers strike is over and my shows are coming back…sad, I know!
  • Quite possibly one of my favorites…when Lorin lets me sleep in!!
